Watermelon, the ubiquitous fruit of summer, pairs with antioxidant-rich strawberries for a refreshing and sweet summer cooler. Omit the rum for a family-friendly mocktail version.
This cocktail whips up in a matter of seconds and is a favorite summertime drink. It’s the perfect accompaniment to a book in the hammock, friends on the patio, or a game of croquet. You can scale it up, but don’t scale it down. If you’re drinking it solo, pour that second cocktail into a shallow baking dish and throw it in the freezer. Rake a fork through it once an hour for the next 2 hours, then enjoy your daiquiri granita in the bath tonight.
Or just drink both. I won’t tell.
3 C chopped watermelon
1 C frozen strawberries
2 shots of rum (may omit for a mocktail)
1/2 lime
2 C ice
Blend your watermelon, then strain it into a bowl and pour back into the blender.
Add strawberries, rum, lime juice, and ice.
Blend thoroughly and serve.
Yield: 2 drinks
