At the end of a long week, one of the most enjoyable ways to unwind is with a delicious cocktail. I love nights out, but sometimes, I want nothing more than to curl up on the couch with my drink, a soft blanket, and the remote. This particular cocktail, made with creamy coconut milk, cold brewed coffee, and smooth Bailey’s, tastes fancy enough that it might have come from my favorite bar, and it’s perfect for a Netflix night of self-indulgent relaxation.
The Coconut Bailey’s Mochatini
- ½ oz. vodka
- 1 ½ oz. Bailey’s Irish Cream
- 1 ½ oz. cold brewed coffee
- 1 oz. coconut milk, divided
- Shredded coconut for garnish, optional
You can simply mix all these ingredients together and enjoy – as I have done. But it’s also fun to do this as a layered drink. (The secret to layering is to remember that the more sugars a liquid has, the heavier it will be, and that to avoid mixing, you need a slow pour.). First, combine vodka and Bailey’s. Add those to your glass. Next add half an ounce of coconut milk. Then add your coffee. *Whip the remaining half ounce of coconut milk and pour on top. Sprinkle with shredded coconut. Now take your fancy glass of deliciousness to the couch and begin your TV therapy. You deserve it.
*It’s fine to substitute whatever whipped topping you want here.
