No matter how you see things, this has been a brutal election season.  We are all exhausted and ready for it to be over, so if we are gonna make an election-night cake, we don’t have the energy to mess around.  This gingerbread made with a hearty stout is the perfect thing to whip up when you just CAN’T EVEN anymore.  You can throw all of this together in a few minutes, and the finished cake doesn’t need adornments of any kind.  We don’t have the patience for foofy cake decorating anyway, JUST GIVE US CAKE WITH BEER, am I right?

Ingredients: 

  • 1 stick (8 Tablespoons) unsalted butter at room temperature
  • ¾ cup packed light brown sugar
  • 1 large egg
  • 3 Tablespoons molasses
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup stout beer (I love baking with Left-Hand Brewing’s Milk Stout, but pick your favorite)

Directions: 

Preheat your oven to 350 degrees.

Line a 9 x 9 square pan with parchment paper or butter and flour the pan.

In a medium bowl, combine the flour, baking soda, spices and salt and whisk together until combined.  Set aside.

In a mixing bowl, cream the butter and brown sugar together until light and fluffy.  Add in the egg and then the molasses and mix.  Scrape down the bowl.

Add in the flour mixture and beer alternately, so some of one and then some of the other, mixing in between.  Drink any leftover beer to celebrate America!

Transfer the batter to the prepared pan and bake for 30 minutes or until a toothpick comes out clean.

Let cool completely, remove from the pan and cut into squares.

When my cake was finished and I cut it up, I noticed that one of the squares had a face on it.

Well, hey, little dude, don’t look so worried.  No matter what happens on election night, we’re going to be okay.  Really.  We can make things better, no matter what because we’re Americans and that’s what we are good at.  Oh, I can see you don’t believe me.

No, you don’t have to move to Canada, although I totally get why you want to.  Canada is a fine place with friendly people and excellent candy bars, but we’re not Canadians, we’re Americans, and we have a lot of great things here, too.  Hang in there, Little Cake Man.
