It’s the most wonderful time of the year… Star Wars Day!

This cookie pays homage to the furriest of heroes in the galaxy. No, not Luke Skywalker in that sketchy beard! This here is a Wookiee Cookie, my friends. It’s full of coconut, caramel and chocolate. A cookie fit for you and your co-pilot to share on this, the most prestigious holiday of them all.

First, whip up a batch of my Big Cookie Recipe, but add in only coconut.

Other things you’ll need:

  • 2 12-ounce bags of Kraft caramel bits
  • 3 Tablespoons heavy cream
  • 12 ounce bag of milk chocolate
  • 1 Tablespoon canola oil
  • 1 bag sweetened, shredded coconut

Once the cookies have cooled, melt 12 ounces of the caramel bits and the heavy cream. I use the microwave for 30 seconds at a time, stirring in between. When it’s all melted and smooth, use a butter knife or small offset spatula to spread a thin layer of caramel on each cookie.

Set the cookies aside while you go to the store for the coconut you swore was in the cupboard but is clearly not. When you get back the caramel will be set!

Over medium heat, toast your shredded coconut in a pan, stirring to avoid burning. Toast until coconut is the color of Chewie’s fur. Set aside.

Melt the chocolate chips and canola oil together in the microwave, the same way you melted the caramel.

Spread chocolate mixture on each cookie and layer toasted coconut on top. Make it look furry! I went back with a fork and roughed it up a little to look more like Chewie fur. Use leftover caramel bits to make Chewie’s bandolier.

That’s it! Serve them up with a glass of milk and your favorite Star Wars movie, but not the ones with Jar-Jar Binks, or else the cookie will jump up and break your neck. Just a warning.
