Butterbeer is a drink described in J.K. Rowling’s Harry Potter series (of which, I cannot lie, I am a rabid fan). Wizards and witches quaff foamy tankards of the stuff in establishments like the Leaky Cauldron. It’s slightly alcoholic, sweet, and restorative. You can find many non-alcoholic recipes out there, but I prefer the grown up version. This is one I’ve test driven myself, and I highly recommend it.
Ingredients:
- 1 – 2 oz. butterscotch shnapps, depending on how sweet you want it (I prefer 1 oz.)
- 2 oz. whipped cream flavored vodka
- 6 oz. cream soda
- 1 tbsp. melted butter
- French vanilla ice cream
This makes two servings, so multiply ingredients accordingly if you want more. Heat all ingredients in a small saucepan until almost simmering. Put a scoop of Ice cream in each mug and pour warm mixture over. You can also serve this cold, in which case you should add the melted butter at the last moment. Enjoy!
