A fresh, delicious muffin is a great accompaniment to a hot cup of coffee, and these Buttermilk Cinnamon Donut Muffins fit the bill perfectly. The buttermilk makes them fluffy and tender, and the fresh nutmeg and topping of cinnamon sugar gives them a wonderful flavor reminiscent of cinnamon cake donuts. We tested these extensively and the results were unanimous. Thumbs way up.
Ingredients:
- ½ cup (8 tbsp.) butter, softened
- 2/3 cup sugar
- 1 large egg
- ½ cup buttermilk
- 1 ½ tsp. vanilla extract
- 1 ½ cups flour
- ½ tsp. baking soda
- 1 ½ tsp baking powder
- ½ tsp. salt
- ½ tsp. freshly ground nutmeg
Topping:
- ½ cup butter, melted
- ¾ cup sugar
- 1 tbsp. cinnamon
Preheat oven to 350 degrees. Cream butter and sugar with a mixer until fluffy. Beat in egg. In a separate bowl, mix dry ingredients. Add half the dry ingredients to the butter mixture. Mix well and add buttermilk and vanilla. Add second half of dry ingredients and mix until just combined. It’s okay if the batter is lumpy. Divide batter evenly into 9 greased muffin cups. Bake for 25 minutes. Let muffins cool completely. After they are cooled, dip the top of each muffin in the melted butter and then into the cinnamon sugar. Enjoy.
