I made Scotcheroos recently for Girls’ Night and was shocked by how many of my friends had never had them. Maybe it’s our health-consciousness, or our continual search for the latest and most instagrammable rainbow-colored foods. These aren’t healthy. They’re not even pretty. But you know what they are?

Crispy, chewy, chocolatey, sweet, peanut buttery, and so satisfying. If you haven’t had these before, you owe it to yourself to try them. And if you have, you owe it to yourself to make some right now, because I don’t have to sell you on how insanely delicious these little bars are. Plus, they only take 20 minutes, tops. And they’re so easy that if it weren’t for the boiling-sugar-syrup part, these could be made by a toddler.

You will need:

  • 1 C peanut butter
  • 1 C sugar
  • 1 C light corn syrup
  • 6 C crisp rice cereal
  • 1 bag chocolate chips
  • 1 C (or half a bag) butterscotch chips

This recipe comes together pretty fast, so I like to get everything measured out and ready before I start.

First take out a rectangle pan (9”x13”ish) and grease it. I used coconut butter, but you can use regular butter, too. Generally it’s easiest to grab a teaspoon of butter with a paper towel, then use the paper towel to smear it all over and into all the corners.

Dump the chips into a microwave-safe bowl, Put the sugar and corn syrup in a saucepan, and measure out your cereal into a LARGE bowl. The biggest bowl you own. Trust me.

Put the saucepan over medium heat, stir to combine, then stir it a bit until it starts to boil (about 5-10 minutes). Stir in the peanut butter.

As soon as the peanut butter is all melted into the mix, dump it over the cereal in your giant bowl. Fold it in, trying not to smoosh the cereal, until all of the cereal is coated.

Scrape the cementy mix into the prepared pan and even it out with a spatula. I know, you are shocked that I didn’t butter up my hands and use them. But this stuff is seriously hot still AND seriously sticky. A silicone spatula will not stick; literally everything else will.

Pop your chips into the microwave for 45 seconds. Take them out, stir them, then put them back in for 30 seconds. Take them out, and stir until all the little chunks are melted.

Pour the chocolate over the cereal and spread it out with your spatula. I like to take the pan and drop it from an inch or so onto the counter to even it out.

Let cool, then cut into small squares. Trust me on this one, too. Giant bowl, small squares. These are things I have learned through experience. I know that you won’t be able to stop with one of these babies; you will want at least five. And if they’re only an inch square you can totally get away with it.
