The only thing better than a margarita is a spicy pink margarita! You can make these refreshing cocktails with or without the spice (or alcohol), but I’d recommend them as they are. The first recipe is for just one, the second is for making four (you’re going to want to make all four, trust me).
Spicy Watermelon Margaritas
For one cocktail, you will need:
- 1 T honey simple syrup (recipe below)
- 1 T lime juice
- 1 shot tequila (1.5 ouces)
- 1 1/2 cups seeded watermelon (for about 3 oz. watermelon juice)
- 4 slices jalapeño
- Ice
- Salt to rim glass
Honey Simple Syrup (makes enough for 8 cocktails)
Combine 4 T water and 4 T honey in a microwave safe bowl. Microwave for 30 seconds, then stir. If the honey isn’t quite dissolved into the water, microwave another 10 seconds. Set aside. (This will keep in the fridge for about two weeks if you’re not using it all today.)
Blend the watermelon on high speed until it is completely liquefied, about 15 seconds. You can use it unstrained, but I prefer to strain it. Set aside.
Rim a glass with salt, if desired, and fill it with ice. Add the slices of jalapeño and muddle. Then add the lime juice, tequila, and 3 oz. of watermelon juice. Stir and enjoy!
For four cocktails, follow the procedure above, but use the following measurements:
- ¼ C honey simple syrup
- ¼ lime juice
- 12 oz. watermelon juice (from about ½ of a watermelon)
- 4 shots tequila (6 oz.)
- ½ jalapeño, cut into thin slices
- Ice
