How could this have happened? How can a lover of all things peanut butter give birth to a child who is allergic to peanut butter? Like really, seriously, epi-pen level allergic. I don’t normally even have peanut butter in the house because I tend to get paranoid about just one little blob being dropped on a countertop. I feel certain that my son will find it immediately, like he’s Sleeping Beauty being called to the spinning wheel.
Sometimes, I miss peanut butter so desperately that I get what I refer to as The Craving. The Craving is not just any old hankering. It’s a condition not to be taken lightly. Like a vampire elegantly stalking his prey to quench the thirst for blood, I stalk the grocery store in search of peanut buttery satisfaction. My eyes get wild, and I stomp around the store scaring people out of my way… Actually, I probably look less like a vampire than The Hulk. “Hulk need peanut butter! Hulk smash mortals!” That sort of thing. It’s not pretty.
This peanut butter frosting is perfect for The Craving. It comes together in about five minutes and then what you do with it is up to you. I mean, who’s to say you have to put it on something dumb like a cupcake or brownies? Maybe you want to eat it out of the bowl in front of a Netflix marathon. I’m not judging here! There is a picture somewhere of my teenage daughter eating it straight out of a pastry bag, because sometimes, she gets The Craving, too.
Here’s what you’re going to need:
- ½ cup butter, softened
- 1 cup Skippy creamy peanut butter (it really does have to be Skippy)
- 3 cups powdered sugar
- 4-5 Tablespoons heavy cream
- Pinch of kosher or sea salt
Please note that this recipe calls for butter, not margarine. I don’t even know what this would taste like if you used margarine. Probably pretty gross. Ditto for natural peanut butter because of the oil content. I also include heavy cream and good ol’ Skippy, so if you are in the market for desserts that are vegan, Paleo, Atkins or whatever, then this is not the droid you’re looking for.
Place the butter and peanut butter in the bowl of a mixer, and mix until well blended and smooth.
Ooooo… This is getting good!
Scrape down the bowl with a rubber spatula. Add the powdered sugar and mix on low speed until combined. Add heavy cream and mix on low until it’s incorporated. If it seems like the frosting is not smooth, just add more heavy cream, a tablespoon at a time, until you get that smooth consistency. Then, turn up the speed to get some air incorporated and make it fluffy! Add a pinch of salt to taste.
Oh my gosh.
Ohmygoshohmygosh.
If you don’t want to eat it out of the bowl and you want to be fancy, you could put this on cupcakes or brownies, and then add some chopped honey-roasted peanuts and mini chocolate chips to put on top. If you want to be extra fancy, you could drizzle some melted chocolate on top of THAT. “Yum” is an understatement. Enjoy!
