Nothing heralds the arrival of spring like the annual appearance of those brightly colored delights known as Peeps. As I child, I loved biting the fluffy heads off of those pink and yellow bunnies and chicks and stuffing my cheeks with pillowy, sugar-dusted goodness. This behavior is not nearly as acceptable for adults, but that doesn’t mean we can’t find a way to enjoy these Easter themed treats for ourselves. Thus, the Marshmallow Peeptini.
- 1.5 oz. Pinnacle Rainbow Sherbet Vodka (Pinnacle Whipped Cream Vodka is an acceptable sub)
- 0.5 oz. Tequila Rose
- 1 tbsp. marshmallow topping for ice cream (look near your ice cream section in the supermarket where they stock the jarred fudge sauce and caramel toppings)
Combine ingredients in a large glass or mixing cup and stir. I find it works best to use a hand blender so that the ingredients fully incorporate. Also, be sure to use marshmallow topping and not marshmallow fluff. The topping is a bit more liquidy and will mix better. If you do use fluff, I’d reduce the amount. Pour into a martini glass over crushed ice. Garnish with Peep of choice. Enjoy!
