No-Bake Nutella Espresso Kahlua Cookie Truffles

The elements of this recipe are all things I love. Any one of these edibles or drinkables is delightful in and of itself, but when you combine them . . . it’s basically sorcery. With chocolate.

Let’s start with Oreos. If you grew up without ever curling up with a sleeve of these chocolate wafer creme-filled sandwiches, a cold glass of milk, and a dog-eared paperback then you haven’t lived, my friend.

Then there’s Nutella – a hazelnut chocolate spread of heavenly goodness. In Europe, people put it on croissants and eat it for breakfast, which I’m pretty sure is a sign that we are an advanced species. When aliens land, they’ll be like, “Should we blow them up? No, wait – they’ve apparently made some kind of happiness paste. Let’s study them.”

Espresso, because there isn’t any chocolate-based food that can’t be improved with a rich, tasty sprinkling of caffeine. And then a nice dollop of Kahlua. See previous remark about chocolate-based foods.

The other crucial component to this recipe is what some people call laziness but what I like to call “working smart.” This means, I wanted to make something nummy and sort of fancy, but I didn’t feel like going to the store or turning on the stove or oven. Forget necessity. Expediency is the mother of invention.

Thus were No-Bake Nutella Kahlua Espresso Cookie Truffles born.

You will need:

  • 18 Oreos
  • 2 tbsp. Nutella
  • 1 tbsp. espresso
  • 2 oz. Kahlua
  • Cocoa powder for dusting

First, mash up your Oreos. I didn’t want to dirty up a food processor, so I put them in a Ziploc bag and pounded them with a meat tenderizer until they were crumbs. In a medium bowl, combine crumbs, Nutella, espresso, and Kahlua. Mix until all the ingredients are incorporated. Scoop out tablespoon-sized balls (the texture of the mixture should be such that you can sort of roll it like Play Dough in your hands – if it’s too wet, mash up some more Oreos and add them). Form balls (hehe) and set them on a waxed paper covered plate. Stick the plate in the fridge for about half an hour. Go read a book or watch a show. Maybe take a walk. Now remove your truffle balls from the fridge and roll them in cocoa powder. Done. If you’re making a batch of these for a party or something, keep them refrigerated until serving. Pretend you slaved over them but you don’t mind because, really, you just like making people happy.
