There’s no better way to celebrate the arrival of fall than with pumpkin and spice and everything nice, and this cake donut recipe has it all. Top it off with some brown sugar bourbon glaze, sprinkle on some bacon, and you may have the perfect comfort food.

Pumpkin Spice Cake Donuts

  • ½ cup vegetable oil
  • 3 large eggs
  • 1 ¼ cups white sugar
  • ¼ cup brown sugar
  • 1 1/3 cups pumpkin puree
  • 1 ½ tsp. pumpkin pie spice
  • 1 ½ tsp. salt
  • 2 cups all purpose flour
  • 1 ½ tsp. baking powder

Brown Sugar Bourbon Glaze

  • ¾ cup dark brown sugar
  • 2 tbsp. maple syrup
  • 1 ½ tbsp.. bourbon
  • 1/8 tsp. salt
  • ½ cup unsalted butter
  • 1/3 cup heavy cream
  • 1 ¼ cup sifted confectioner’s sugar
  • 1/8 tsp. vanilla extract
  • Bacon bits

Preheat oven to 350. Grease two standard donut pans (you can do these as muffins as well). Combine oil, eggs, sugar pumpkin, spices, salt, and baking powder and beat until smooth. Gradually add in flour, continuing to beat until well mixed. Fill each donut well ¾ full. Bake for 18 minutes.

Remove from oven, transfer to rack, and cool completely.

While donuts are cooling, prepare the glaze. Combine brown sugar, butter, maple syrup, bourbon and salt in a medium saucepan. Stir on medium heat until butter melts and sugar dissolves. Add heavy cream and turn heat up to high. Bring to a boil while stirring. Boil for 1 minute and then remove from heat. Whisk in confectioner’s sugar and vanilla and mix until smooth. Let cool for about 5 minutes (when glaze is thick enough to coat the back of a spoon, it is ready to pour). Pour over donuts and sprinkle with bacon bits.
